Paver work usually happens in steps: cleaning the surface and joints, refilling joint sand, and then sealing if you want it. Sealing can help hold joint sand in place and change how the pavers look, from natural to a wet-look finish.
Pavers that have sunk or shifted should be repaired before sealing. Travertine and natural stone are also sealed with different products than concrete pavers.
